Homemade Fruit Bars (recipe from yummytoddlerfood)

1 1/2 C flour

3/4 C oats

1/4 C brown sugar

1/4 tsp salt

2 eggs

1/4 C butter softened

1 tsp vanilla

1 T fresh lemon juice

1 T lemon zest

1/2 C strawberry jam or preserves

Preheat oven to 350 degrees F

mix all ingredients (except strawberry jam or preserves) in a bowl

remove 3/4 C of the mixture and set aside

Press the remaining mixture into an 8x8 inch pan lined with parchment paper

spread the strawberry jam or preserves onto the crust

crumble the remaining dough mixture on top

bake for 35-40 mins

Sourdough Crackers

2 C flour

1 tsp salt

2 T herbs of choice (I like to add parsley, basil, oregano, garlic salt, onion powder or dehydrated onion flakes etc.)

mix

Add in 1/2 C butter softened

1 1/2 C sourdough discard

mix, it will be crumbly dough but just get flour mixed in so there's no dry bits

Form into 2 balls and wrap in parchment paper or plastic wrap, refrigerate 30 minutes.

Preheat oven to 350 degrees F, roll out your dough as thin as you can, use pizza cutter to cut into cracker shapes, poke holes in crackers with a fork, bake for 25 minutes or until crackers are as brown as you'd like.

Tip: the edge crackers brown faster so I will remove those when they are as brown as I like them, but let the center crackers continue baking.
