Weekly Food & Snack Prep

There are definitely some weeks that I don't do this. But I will say that the weeks I am able to go so much smoother. Dinners are a little easier, and my kids have snacks to eat that are filling and made with better choice ingredients.



Homemade Chicken Nuggets Recipe:


Combine in food processor

-1/3 C bread crumbs (I like using seasoned bread crumbs for extra flavor)

-3 T milk

-desired seasonings (garlic powder, onion powder, salt, pepper etc.)

-1 lb cooked shredded chicken


Once combined form into chicken nuggets and dip in egg then breadcrumbs. If you'd like to substitute the egg for melted butter you can do that as well.


Place on greased baking sheet. Rub top of chicken nuggets with melted butter. Bake in oven at 375 degrees F for 8 minutes.

Take them out of the oven, flip them over, rub the other side with melted butter, and return to the oven to bake for 8 more minutes.


Enjoy!


I like to double this recipe so that I can freeze them to use throughout the next little while for an easy lunch or dinner. If you want to freeze them put them on a plate or baking sheet and flash freeze them for 15 minutes. Then place in a freezer bag or container for longer freezer storage. To reheat just bake at 400 degrees F for 15 minutes flipping halfway through.





Sourdough Crackers

2 C flour

1 tsp salt

2 T herbs of choice (I like to add parsley, basil, oregano, garlic salt, onion powder or dehydrated onion flakes etc.)

Add in 1/2 C butter softened

1 1/2 C sourdough discard


mix, it will be crumbly dough but just get flour mixed in so there's no dry bits

Form into 2 balls and wrap in parchment paper or plastic wrap, refrigerate 30 minutes.


Preheat oven to 350 degrees F, roll out your dough as thin as you can, use pizza cutter to cut into cracker shapes, poke holes in crackers with a fork, bake for 25 minutes or until crackers are as brown as you'd like.

Tip: the edge crackers brown faster so I will remove those when they are as brown as I like them, but let the center crackers continue baking.





Onion Soup Mix

1 Cup dehydrated onion flakes

1 Tablespoon onion powder

1 teaspoon paprika

1 1/2 teaspoon garlic powder

1 teaspoon pepper

1 1/2 Tablespoon parsley

1 Tablespoon brown sugar

1 1/2 teaspoon salt


mix together and store in airtight container. Add beef stock when using in a recipe

4-5 Tablespoons equals 1 packet




Taco Seasoning


1/2 Cup chili powder

1/3 Cup paprika

2 1/2 Tablespoon salt3 Tablespoons onion powder

2 1/2 Tablespoons cumin

2 teaspoons cayenne pepper

1 1/2 Tablespoons garlic salt


mix together and store in airtight container.

3 Tablespoons equals 1 packet

add 3/4 cup water to cooked ground beef, and 2-3 Tablespoons of seasoning, simmer for 3-4 minutes




Brown Sugar


1 Cup sugar

1 Tablespoon molasses


mix together until combined and store in airtight container




Peanut Butter Bites


1 Cup peanut butter

2 scoops protein powder

1/2 Cup flour

4 Tablespoons maple syrup

1 teaspoon vanilla

4 Tablespoons milk


mix together, form into small discs, and freeze on baking sheet for 15 minutes.


melt

1 Cup chocolate chips

2 teaspoons coconut oil


dip the discs into the melted chocolate and coconut oil, return to baking sheet, freeze for an additional 15 minutes or until chocolate has hardened. Store in bag or container in freezer and enjoy!





Homemade Poptarts


Grandma Lillie's Pie Crust Recipe:

3 cups flour

1 1/4 cup softened butter

1 teaspoon salt


in separate bowl combine

1 egg

1 Tablespoon vinegar

5 Tablespoons ice water


mix dry ingredients together, then add half of the wet ingredients in at a time and mix. Wrap dough in plastic wrap and refrigerate 30 minutes.

Roll out and bake according to recipe.


You can make the pie crust recipe above or use whatever pie crust recipe you want.


Roll pie crust out and cut into rectangles. Put a little filling into each one making sure to leave the edges free from filling. Seal the edges with a fork, place on baking sheet and bake at 450 degrees F for 18-20 minutes.


Brown sugar filling:

1/2 Cup softened butter

1 Cup brown sugar

2 teaspoons cinnamon


Strawberry filling:

strawberry jam (can also use any type of jam)


Frosting recipe:

1 Tablespoon melted butter

2 Tablespoons milk

1/4 teaspoon vanilla

1 Cup powdered sugar

(if making brown sugar poptarts add 1 teaspoon cinnamon)
